Purée of Jerusalem artichokes
250 grammes of Jerusalem artichokes
some please of celeri or the parsley, the chervil
a hazelnut of butter (10 grammes)
To peel Jerusalem artichokes (it is the most delicate operation of the
recipe!)
Wash so that the leaves of celeris equeutées
Cut the Jerusalem
artichoke in pieces
Put to cook in a saucepan with the celeri and some
water.
Wait around thirty minutes
Put in a blender Add the butter
